  4. In a separate pot, bring the 8 cups of water to a boil.
  5. While waiting for the water to boil, peel and smash the garlic and ginger, and add them to the mixing bowl.
  6. Once the water is boiling, remove it from heat and let it cool for a few minutes.
  7. Add the water to the mixing bowl with the radish and green onions, making sure that everything is fully submerged. Add the dried red peppers if you like your dongchimi spicy.
  8. Cover the mixing bowl with a lid or plastic wrap and let it sit at room temperature for about 24 hours.
  9. After 24 hours, transfer the dongchimi to an airtight container and store it in the fridge. It will keep for several weeks, and the flavor will continue to develop over time.
